37. What makes one fat saturated and another unsaturated?
The greater number of double bonds makes one fat less saturated than another. The first molecule is from butter and the second molecule represents vegetable oil. Note the vegetable oil's left fatty acid chain has two double bonds, that makes it more less saturated that the other two fatty acid chains. The butter is a saturated fat and vegetable oil is considered a unsaturated fat. What we are talking about is the actual number of hydrogens the molecules contain. The hydrogens produce calories and therefore more fattening.
